What to do, what to do.
Make mango and jalapeño jam! I found this recipe over at Recipe Zaar and used up most of the mangoes and most of the peppers. So what did I do with the additional leftover peppers?

Made mango jalapeño poppers. I sliced and cleaned out the peppers, added mangoes in each then topped with cheese I had in the freezer, one a cocoa-goat cheese and not sure about the other, but they blended nicely. Popped them in the oven at 345 degrees for 25 minutes, until the cheese was a nice golden brown.
They were quite tasty. A little hot (spicy hot), but good.
The big accomplishment of the day was using extreme caution when working with the peppers. I used vinyl gloves so not to get the pepper juice on my fingers, which usually end up on my contacts and burning my eyes. This time, I learned from previous mistakes.
